Vinification, winemaker's own words

Soils:

Slate

Terroir:

Location: D.O. Bierzo (León), specifically from high-altitude plots in San Lorenzo and Valdueza (480–600m). Soil: Unlike the typical clay of the region, these vines grow on slate and schist (pizarra), which gives the wine its distinct stony minerality. Climate: A continental-Atlantic microclimate protected by mountains. This allows for slow ripening and preserves high natural acidity. Vines: Primarily old vines (over 40 years), which results in lower yields but much higher concentration and complexity.

Harvest:

Picked by hand

Fermentation:

Steel (100%)

Storage:

Old oak (50%) 6 months

Winemaker:

AMANCIO FERNANDEZ

Static pressing and racking, pre-fermentation maceration for 12 hours. Total fermentation 12 days with native yeasts
