Pomario

Harvesting takes place early in the morning during the month of October. The must is left to macerate with the skins until the cap rises. subsequently , the skins are pressed and the juice is transfered into barriques for fermentation, inoculated with indigenous yeasts. The only interventions performed are daily batonage . the first coarse racking occurs only after the completion of both alcoholic and malolactic fermenations. The process then continues with four additional rackings per year to ensure the wine when is clear and ready for bottling after a very light filtration
