Vinification, winemaker's own words

Soils:

Clay, Gravel

Terroir:

Clay soil, rich in galestro and alberese with iron, sulphur and quartz. Typical "Gaiole in Chianti" terroir with sensible day/night temperature differences, giving wines with aromas, fruitiness, complexity and an elegant acidity.

Winemaker:

Castello di Meleto

The grapes, carefully selected in the single vineyard and hand-harvested, are destemmed and gently pressed. The must is sent to fermentation at controlled temperature. Once the alcoholic fermentation is over, the wine remains in contact with the skins for 15-20 days by racking in cement tanks to facilitate decantation. Then, malolactic fermentation begins and the wine ages at least 27 months in 30 hl French oak barrels. Minimum aging in the bottle: 6 months
