The grapes, carefully selected in the vineyard and hand-harvested, are destemmed and pressed, and the must is fermented at controlled temperature. Once the alcoholic fermentation is over, the wine remains in contact with the skins for 15-20 days by racking in cement tanks to facilitate decantation. Then, malolactic fermentation begins and the wine ages at least 27 months in 50 hl, 30 hl French oak barrels and tonneaux. Aging and maturation: 40% in French oak barrels 50 hl 45% in French oak barrels 30 hl 15% tonneaux Minimum aging in the bottle: 6 months
