Gentle pressing and pre-clarification through sedimentation.Fermentation under controlled temperature in stainless steel tanks (50 %)and in French tonneaux/barriques (50 %) with 100 % malolactic fermentation.After 12 months of aging on the fine lees, bottling and aging in the bottle fora minimum of 6 months follow.
