Destemming and mash fermentation under controlled temperature in stainless steel tanks. After malolactic fermentation, aging in stainless steel tanks and wooden barrelsfor 12 months. Assemblage 2 to 3 months before bottling, followed by 6 months’ aging in the bottle.
