Manual harvesting, light destemming and fermentation in temperature controlled stainless steel tanks. Continuous pumping over is done to the wine during fermentation to help extract polyphenols and aid the fermentation process. Then it’s aged for about 12-15 months in French oak barrels of 50HL, the period of ageing depends on the year.

Information
The winery, founded in 1900 by grandfather Valentino, is now managed by Luigi and Alfredo Grasso. They lead approximately 15 hectares of vineyard with an annual average production of approximately 70 thousand bottles. Production is mainly focused on Barbaresco, of which we produce 3 different Crus: Vallegrande, Giacosa Spessa and San Stunet.
