The must obtained from soft pressing is fermented in steel tanks for 7-9 days of maceration on the skins and gentle wetting of the cap at a controlled temperature. Following alcoholic fermentation, malolactic fermentation is rapidly induced. The wine is aged exclusively in steel tanks to best preserve its fruity notes.
