The grapes are gently pressed, immediately cooled, and pressed. The resulting must is clarified and fermented in a steel tank at a controlled temperature. The sparkling wine base is aged on the lees in a steel tank for approximately three months. After this period, filtration is performed and the secondary fermentation takes place in an autoclave using the Martinotti method for two months.
