The maceration of the grapes, which takes place for approximately 4-5 days in a steel tank at low temperatures, allows the color and characteristic aromas present in the skins to be released. This is followed by rapid and frequent punching down of the cap, racking, soft pressing, and filtration. The resulting musts are stored in a tank at 0°C. The secondary fermentation takes place through natural fermentation in an autoclave.
