The must obtained from soft pressing is fermented in steel tanks for 12-15 days of maceration on the skins and gentle wetting of the cap at a controlled temperature. Following alcoholic fermentation, malolactic fermentation is induced. Aged in 15-hl oak barrels for 18-24 months, depending on the vintage.
