MATTIA PETRUSSA
After manual harvesting, the grapes are destemmed and gently pressed. The free-run juice undergoes a slow fermentation in stainless steel tanks at 14°c for about 15 days. Following this, a series of bâtonnages are performed to extract its complexity and structure, drawing out its delicate aromas. bottling takes place in April.
