In the cellar, the general principle is to protect as much as possible the grappe and wine integrity : harvest in boxes, selection of the grapes, use of the gravity, development of the indigenous yeast. The grain is separated from the wooden components of the grape. The punch down is mainly done by hand, the pumping over is only done in order to homogenize the harvest, and the second day to help the multiplication of the yeast.
