In the winery, with the premise of preserving the integrity of the grapes and the wine as much as possible, the selected grapes are directly pressed and vinification is carried out with native yeasts and no additives. A low dose of sulphur can be used when bottling certain cuvées, but this is not systematic and always depends on the vintage.
