Soils:

Clay, Limestone

Harvest:

Picked by hand, Mechanically

Steel (100%)

Storage:

Steel (33%) 12 months
Old oak (33%) 12 months
New oak (33%) 12 months

Winemaker:

Arnaud Villette

In the cellar, Saint-Paul is made with a light touch: the grapes are sorted carefully, fermented in concrete and steel, and handled with gentle, slow extractions. A traditional vertical press and separate aging of each lot keep the wine pure, fresh, and honest before the final blend.
