Terroir:
Saint-Paul grows on a sunny, south-facing hillside in Saint-Seurin-de-Cadourne, where red and blue clay soils give the wine its fresh, smooth style. The clay holds water naturally, helping the vines stay balanced even in warm summers.

Fermentation takes place in concrete and stainless-steel vats, with gentle extractions to keep the fruit bright and fresh. A portion undergoes malolactic fermentation in barrel, adding roundness and texture. Pump-overs are done delicately, sometimes by hand, to respect the purity of the grapes. The goal: a clean, vibrant Médoc with natural energy.
