Terroir:
Saint-Paul grows on a sunny, south-facing hillside in Saint-Seurin-de-Cadourne, where red and blue clay soils give the wine its fresh, smooth style. The clay holds water naturally, helping the vines stay balanced even in warm summers.

Hand-harvested and sorted, the grapes ferment in concrete and stainless-steel tanks over 30 days with gentle pumping-over and manual wetting of the cap. Partial malolactic fermentation occurs in barrel. The wine is aged 12 months: 1/3 in oak barrels (20% new), 1/3 in stainless steel or concrete vats and 1/3 in vats with staves. The result: precision extraction, supple tannins, and rich but balanced fruit.
