Saint-Paul grows on a sunny, south-facing hillside in Saint-Seurin-de-Cadourne, where red and blue clay soils give the wine its fresh, smooth style. The clay holds water naturally, helping the vines stay balanced even in warm summers.

Hand-sorted fruit fermented in concrete and stainless-steel tanks with gentle extraction (pumping-over, punching-down, manual wetting of the cap). Malolactic was completed early (malic acid = 0), and ageing took place in a mix of vats and barrels, focusing on freshness, lift, and clean fruit expression.
