Vinification, winemaker's own words
Soils:
Limestone
Terroir:
Hot, dry summers and cold, snowless winters characterize our climate. The vineyards grow on loess soils of varying thickness. We practice dry farming, relying solely on natural rainfall for irrigation.
Harvest:
Picked by hand
Fermentation:
Steel (100%)
Storage:
Steel (100%) 19 months
Winemaker:
Fritz Salomon
The wine undergoes spontaneous fermentation without the addition of commercial yeasts. It is left unfiltered, preserving its natural character. After fermentation, the wine is aged on the fine lees for 19 months, allowing it to develop more depth and complexity.
