Fermentation always occurs naturally and spontaneously. The grapes always ferment in 500-liter oak barrels with an open lid, without temperature control with indigenous yeasts. The maceration is variable but can last up to two or three weeks. Aging for more than 24 months in new French and Hungarian oak barrels. After aging, a slight clarification is carried out.
