Both varieties are fermented separately in 11,000-litre foudres and in stainless steel tanks of different sizes. Subsequently, malolactic fermentation is carried out in the same type of tanks where the alcoholic fermentation takes place, in addition to 30% of the wine being fermented in new 500-litre French oak barrels. Finally, the wine is aged for approximately 12 months in new and used French oak barrels.
