Harvested by hand in 14 kg boxes, the grapes pass through a sorting table before pressing. Very limited yields will be obtained from the press, seeking maximum quality and minimum oxidation. Part of the must ferments in stainless steel tanks and the other part in French oak barrels. At the end of alcoholic fermentation at a very low temperature, the wine will be aged on its lees in 225-liter French oak barrels for at least 9 months. It is then clarified, lightly filtered and bottled. Finally, it will be aged in bottle for at least 12 months before release.
