Vinification, winemaker's own words

Soils:

Slate

Terroir:

Steep, terraced vineyards planted on poor, rocky llicorella (slate) soils. This fractured slate retains heat and forces vines to root deeply, producing low yields and intense concentration. Mediterranean cimate with hot, dry summers, cool nights, and limited rainfall.

Harvest:

Picked by hand

Fermentation:

Steel (100%)

Storage:

Concrete (100%) 12 months

Winemaker:

PEP RIBA

The grapes from different vineyards located in Lloar, Gratallops, Torroja and Poboleda, making this wine a true representation of a Priorat Grenache in its most delicate aspect. The estates are vinified separately in stainless steel tanks at controlled temperatures. Fermentation is spontaneous with native yeasts and a short maceration period of between 8-10 days with gentle pump overs to guarantee a subtle extraction. The alcoholic fermentations lasted for 15 days, giving way to the spontaneous malolactic fermentations carried out in the aging tanks.
