Ruby red colour with violet notes and medium layer.
Aroma:
Fine and subtle aromas, with a delicate floral expression where violets and geraniums stand out, accompanied by spicy notes of black pepper and cloves, liquorice and wild fruits, especially fresh blackberries. There are also citrus nuances of grapefruit peel, hints of tobacco leaf and dry grass, over a mineral background reminiscent of wet slate and graphite.
Taste:
The palate reveals a vibrant and expressive personality, with an explosion of fresh and sweet black fruits, sweet liquorice and subtle spice notes. Its silky, sandy tannins give it structure and persistence, while its good acidity gives it breadth and depth. A direct, pure wine with character that, without losing its identity, irresistibly invites you the next sip.

Vinification, winemaker's own words
Soils:
Slate
Terroir:
Steep, terraced vineyards planted on poor, rocky llicorella (slate) soils. This fractured slate retains heat and forces vines to root deeply, producing low yields and intense concentration. Mediterranean cimate with hot, dry summers, cool nights, and limited rainfall.

Pachem Cariñena 2022 is made from 30–40-year-old Carignan vines in two estates, Torroja and Poboleda. The grapes were harvested between the 20th and 23rd of September, following a meticulous process to preserve the quality of the fruit as much as possible. The spontaneous fermentation lasted 15 days, with gentle crushing of the skins to extract all its expression. Finally, the wine rested in concrete vats, where it acquired its characteristic balance and depth.
