Soils:

Terroir:
The wine comes from bush-trained vineyards that are 116 years old. The vines are co-planted, predominantly with Mencía. The climate is moderately continental, with Atlantic influence depending on the year. The soils are clay-loam, mainly composed of slate and quartzite.

The grapes are fermented in stainless steel, with 30% whole clusters and 70% destemmed. Fermentation occurs spontaneously, with gentle extraction to preserve the identity of the grape. After alcoholic fermentation, the wine undergoes malolactic fermentation in tank, and is then aged in used barrels for 11 months.
