Fermentation is carried out in small stainless-steel tanks using indigenous yeasts, with alcoholic fermentation reaching temperatures of up to 28 °C. As the wine is run off the skins, it is transferred directly into barrel, followed by a two-day post-fermentation maceration to refine structure. Malolactic fermentation takes place in barrel, after which the wine is aged for 24 months in fine-grain French oak with a single racking. Following barrel ageing, the wine rests for a further eight months in stainless-steel tanks to harmonise before bottling. No stabilization is applied, preserving the wine’s natural character.
