Vinification, winemaker's own words

Terroir:

All Demencia vineyards are located within the municipality of Villafranca del Bierzo. They lie at altitudes between 490 and 600 meters, and their soils vary in texture, orientation, and composition, complementing one another.

Winemaker:

Nacho Léon

Fermented in small stainless steel tanks with indigenous yeasts at temperatures up to 28 °C. The wine is run off the skins directly into barrel, with a short post-fermentation maceration of two days. Malolactic fermentation takes place in barrel, followed by 24 months of ageing in fine-grain French oak with one racking. The wine then rests for a further nine months in stainless steel tanks prior to bottling. No stabilization is applied.
