Manual harvest of all grapes simultaneously, 24h skin maceration in cold-storage before pressing. Spontaneous co-fermentation of the mixed juice in 225 and 500 l used French oak barrels where it stays for 12-month static aging on its lees. Additional 12 month aging in steel tank for natural clarification with natural winter cold. Light filtration, only addition of sulphites.
