Manual harvest in 15 kg boxes.Pressing of 50% of the whole bunch, and the rest of the grapes are gently destemmed without crushing. Natural static racking. Fermented in 225 and 300 litre barrels and in stainless steel tanks. Native yeast. Aged on its fine lees for 8 months in barrels and a minimum of 12 months in the bottle.
