Maceration with subsequent contact with the skins for up to four weeks. The wine undergoes a slow fermentation in 4,500-liter French oak vats and is then aged for 12 months in 220-liter French and American oak barrels.

It was back in 1963 that the Cuartero family planted their first vines in the barren, mineral soil of Tabuenca, Spain. Today, the Cuartero brothers are the second generation to run this high-altitude winery, located 700 m above sea level. The climatic conditions mean that the now 19-hectare estate, which has been part of Palmeri since 2012, produces only small yields.
