Spontaneous fermentation in steel. Destemming and crushing of grapes. Wine rests in steel and cement on fine lees. Re-fermentation the following spring with the addition of Garganega raisin must. The grapes, dried naturally in crates, are pressed in February. Spontaneous yeast departure is waited for and then the must is added to the wine before bottling. Vinified and bottled without any treatment or filtration. Wine "sur lie "has sediment at the bottom, an indication of the product's genuineness.

Siemàn ("six hands" in Venetian dialect) was born in Villaga, where organically farmed vineyards stretch across hilly terrain surrounded by woods. Healthy grapes are transformed into wine through spontaneous fermentation, without additives or treatments. In 2017, a brewery was added, focused solely on spontaneous and mixed fermentations using native vineyard flora. Most beers are also made with estate-grown grapes. Our passion is to honor the land by creating authentic products deeply connected to their origin, in harmony between Man and Nature.
