Spontaneous fermentation in steel. Destemming and crushing of grapes. Wine rests in steel and cement on fine lees. Re-fermentation the following spring with the addition of Garganega raisin must. The grapes, dried naturally in crates, are pressed in February. Spontaneous yeast departure is waited for and then the must is added to the wine before bottling. Vinified and bottled without any treatment or filtration. Wine "sur lie "has sediment at the bottom, an indication of the product's genuineness.
