Obtained by soft pressing, with separation from the grape skins. Alcoholic fermentation is carried out under temperature controlled conditions, where the spumante base is kept in stainless steel tanks at 8-10°C. Th spumante base is then filtered and placed in autoclaves, sweetened a little and selected yeasts are also added. Once the desired pressure is achieved, the glera spumante is chilled and cold stabilised for 15 days at -4°C, it is subsequently filtered and isobarically bottled.
