Wine produced using Vermentino and Chardonnay grapes. The vinification is carried out entirely in steel tanks, at a controlled temperature of 16 °C, so as to be able to extract all the aromas from the grape. The wine is aged in steel tanks for about 3 months, during which the pre-bottled wine remains in contact with the fine lees. After bottling, the wine is aged in the bottle for approximately a month.

Sestilia is an IGT Toscana Rosato (Tuscan Rosé) organic produced from Sangiovese and Canaiolo grapes, selected manually and harvested from the lower and cooler part of our vineyards. The grapes are harvested during the first ten days of September, after which they are de-stemmed and gently pressed. The clarified must is fermented at low temperature to preserve its bouquet. The wine is aged for 3 months on fine lees and after it is bottled, it rests in the bottle for 3 months.

Bordocheo Rosso is produced with Sangiovese, Canaiolo, Ciliegiolo, and Merlot grapes, which are harvested by hand in September. The temperature-controlled fermentation in stainless steel tank, which take place for 14 days with daily pumpings, and the soft pressing of the grapes, allows the fruit to fully develop its bouquet and its moderately tannic structure. The wine is matured in stainless steel tanks for about 10 months and is then bottled and further refined for at least 3 months before its commercial release.
