Fermentation occurs spontaneously. Vinification takes place in stainless steel vats, with the must macerating on the skins for 12/18 days. After racking, the wine rests in stainless steel for 3 months before aging in neutral (third-passage or older) barriques for 12 months. The use of neutral barrels ensures micro-oxygenation without imparting woody notes. An additional 30 to 45 days in stainless steel precede bottling. The wine is then bottle-aged for 2 to 3 months before release.
