The grapes are harvested early to maintain their acidity and aroma. The must is immediately separated from the skins by soft pressing, cleaned by static decantation, and fermented at a controlled temperature with selected yeasts. Once fermentation is complete, it is aged in stainless steel and fermented foaming according to the Charmat method.

Information
Ours is a family winery, now in its fifth generation. Our vineyards are located within a natural amphitheater on the highest Novara Hills in the municipality of Boca, on the rocks of a fossil supervolcano. The vines that grow on these soils produce structured and particularly mineral wines, with a characteristic acidity that gives them a long life in the bottle. To produce the youngest and fruitiest wines, we cultivate our vineyards in the municipality of Cella Monte, a charming village in Monferrato, a UNESCO World Heritage site.
