The grapes are pressed whole bunch, the must is flaotated, then fermented in new French oak barriques. After that the wine transferred to an old oak barrel where it remains for 10 more months.

The grapes are crushed, destemmed and loaded in the tank. After 7 days of maceration the grapes are pressed and the wine finishes fermentation without the skins. Aged in glass damigianas (54 l) for 10 months.

Vinified in the "old Roero way": the grapes are crushed, destemmed and loaded in the vat, where the fermentation immediately kicks in. After 48 hours, when the "cap" is lifted, the free run fermenting must is drained and vinified without the skins.
