    The wine comes from the main estate vineyard in the Langhe, high altitude (350-400 m a.s.l.) steep slope (44-51% of inclination). 70% of the blend is the rare Caruet (Moretto) aka Mexican Nebbiolo

    All 4 varieties are picked and pressed together. Some days before the fermentation is finished the wine is bottled without any additions, finishes fermentation in bottle and isn't touched anymore. Thus it remains fizzy and with some lees in the bottle.
