Vinification, winemaker's own words

Terroir:

Perched at an altitude of approximately 300 meters, our vineyards are a unique natural amphitheater, nestled between the Langhe and Monferrato (a UNESCO World Heritage site). Geology: The soil is composed of calcareous-clay marls, remnants of ancient seabeds. This specific composition grants the wines a profound minerality and an elegant structure. Microclimate: The meeting of cool Alpine currents and temperate breezes from the Ligurian Sea creates an ideal temperature range. This ensures a slow and perfect ripening process, preserving both acidity and varietal aromas. Environment: Optimal sun exposure and natural soil drainage make organic cultivation a spontaneous choice of excellence.

No chemicals are used. Destemming and gentle pressing of the grapes using a wooden press. FERMENTATION AND MACERATION: Vinification takes place in conical wooden vat and involves several pumpings over. Once fermentation is complete, the must is separated from the skins. VINIFICATION AND AGING TIME: After fermentation is complete, the must is separated from the skins. The wine ages for 6 months in a still tank, then is bottled and finally aged for 2 years in the bottle before release.

Located in Calosso, Asti (Piedmont), our family-run winery comprises nearly four hectares of vineyards within the prestigious UNESCO World Heritage site, 'Vineyard Landscapes of Piedmont: Langhe-Roero and Monferrato.' For four generations, since the time of our great-grandfather Costantino ('Tantin'), we have preserved our family’s winemaking traditions. This legacy is now carried forward by my brother and me. Since 2001, we have remained dedicated to sustainable excellence, with all our wines being certified organic.
