- Pre-alpine climate, fresh and rainy spingtimes, humid hot and medium rainy summers with big temperature gap betwewen day and night. Sub acid soil.

Hand picked, crushed (we freeze some liter of its juice), spontaneously fermented, 4 days of skin contact. In the following year, during springtime, we unfreeze the juice wich starts to ferment spontaneously and we add it to the wine during bottling.
