Terroir:

Pre-alpine climate, fresh and rainy spingtimes, humid hot and medium rainy summers with big temperature gap betwewen day and night. Sub acid soil.

Hand picked, we crush 1/4 and put the remaining 3/4 as whole bunches. Carbonic maceration for 7/10 days and then we press everything and let the fermentation finish all the residual sugars.
