Pre-alpine climate, fresh and rainy spingtimes, humid hot and medium rainy summers with big temperature gap betwewen day and night. Sub acid soil.

Hand picked, crushed, skin contact just until the fermentation starts (1/2 days). The rest of the fermentation is without skin contact. Ages the whole winter in the concrete tanks and we bottle it in the following spring.
