Authentic Cerdon is produced using the traditional method of winemaking and a blend of two grape varieties: Poulsard and Gamay. Cerdon from Domaine de La Dentelle is renowned for its fruity aromas, unique color, light mousse, and delicate bubbles. The traditional method is a technique comprising several stages during winemaking: First, the grapes are harvested by hand and pressed immediately after the harvest. The wine then begins its first fermentation at a temperature between 4 and 10°C. When the wine reaches 6% alcohol by volume, fermentation is halted by cooling the tanks. This moment is decisive, as it is the foundation of the entire traditional method used to produce Cerdon. The wine is then bottled and stored in a cellar at a temperature of 12°C.

Founded in 2011 by Marcel Perinet, a passionate sommelier devoted to the land, the estate began with a few plots cultivated with rigor and respect for ancestral methods. Now spanning 8 hectares, it continues an authentic winemaking tradition, producing a delicate sparkling rosé that reflects a preserved terroir and a passion passed down from generation to generation.
