Authentic Cerdon is produced using the traditional method of winemaking and a blend of two grape varieties: Poulsard and Gamay. Cerdon from Domaine de La Dentelle is renowned for its fruity aromas, unique color, light mousse, and delicate bubbles. The traditional method is a technique comprising several stages during winemaking: First, the grapes are harvested by hand and pressed immediately after the harvest. The wine then begins its first fermentation at a temperature between 4 and 10°C. When the wine reaches 6% alcohol by volume, fermentation is halted by cooling the tanks. This moment is decisive, as it is the foundation of the entire traditional method used to produce Cerdon. The wine is then bottled and stored in a cellar at a temperature of 12°C.

Au cœur du Bugey, dans le village de Gravelles, le Domaine de la Dentelle incarne un savoir-faire profondément enraciné dans la tradition. Fondé en 2011 par Marcel Perinet, sommelier passionné et amoureux de la terre, le domaine est né de quelques parcelles cultivées avec exigence et respect des méthodes ancestrales. Aujourd’hui étendu sur 8 hectares, il perpétue une vinification authentique pour produire un rosé pétillant délicat, reflet d’un terroir préservé et d’une passion transmise de génération en génération.
