Maceration in vats for around 3 weeks, depending on the vintage. The wine is pumped over several times a day for the first ten days, and then racked in the middle of fermentation to extract as much aroma and structure as possible. At the end of fermentation, a maximum of one pumping over every two days just to wet the cap of pomace.
