Vinification, winemaker's own words
- Soils:
- Clay, Limestone
- Terroir:
- The vines are planted on clay-limestone soils near Saint-Jean de Minervois at an altitude of 300 meters, facing southwest. The vineyard is managed organically, using liquid manure and decoctions of plants to promote soil life and allow the vines to develop in optimal conditions.

Grapes harvested in 15 kg crates. Just one day of macération for grenache and cinsault. I used this juice to make a infusion with the berries of muscat during 2 days. Then, I pressed and the juice finished the fermentation in old barrel. The wine is aged in vats.
