Through a long and gentle maceration, without excessive extraction, it captures the essence of the fruit while preserving a supple and silky tannic structure. • Harvest: Exclusively hand-harvested, ensuring a meticulous selection of the berries. • Winemaking: – destemming for a refined and elegant extraction. – Gentle crushing to encourage a smooth and natural fermentation. – Long infusion maceration with light pump-overs, allowing delicate extraction of color and aromas without excessive tannins. – Fermentation with indigenous yeasts, preserving the natural expression of the grape variety. – Unfiltered, to maintain the wine’s purity. • Aging: This wine is made exclusively from press juice, first matured in stainless steel tanks, then aged for 36 months in amphorae (terracotta vessels), before being manually bottled and sealed with a technical cork made from recycled cork.
