Terroir:

A single parcel of Cinsault planted in 1969, situated at approximately 90 meters above sea level in the heart of the Terrasses du Larzac on gravelly soil at the foot of the Hérault valley.

Hand harvested with manual sorting and total de-stemming. Pre-fermentation maceration in temperature controlled stainless-steel tanks. Elevage for 12 months in demi-muid (500 litre capacity) oak barrels which date from 2015.
