The 2025 season was hot and dry leading to lower yields of concentrated juice with a rich golden colour. We decided to harvest two weeks earlier than usual to manage the balance of acidity and alcoholic potential. The destemed fruit was gently juiced by horizontal pneumatic press and allowed to clarify for 24 hours before moving the must to Shuette for vinification in our traditional concrete tanks. The fermenting wine was racked twice before bottling with 16g of residual sugar to carbonate the pet-nat in the bottle using the ancestral method. We leave the lees in the bottle and mature the wine for at least 6 months before disgorging giving the wine extra texture and some creamy complexity.
