After the tirage process with the start of a slow second fermentation in bottles, according to the traditional Franciacorta method, the bottles are stacked for at least 24 months. After the disgorgement stage, with the addition of a very dry liqueur de dosage (5g/liter), the Franciacorta undergoes another fining period in the wine cellar for several months.

Information
Familjen Ricci Curbastro, med en jordbrukstradition som sträcker sig tillbaka till 1200-talet, driver gården Rontana i Brisighella samt den liknamna gården i Franciacorta. Av gårdens totala yta på 34 hektar är 32 hektar planterade med vinodlingar enligt de strikta riktlinjerna för modern vinodling och enligt Consorzio Vini Franciacorta, där gården har varit medlem sedan dess grundande. I den anrika parken ligger den underjordiska vinkällaren, där jäsningsprocesserna och den långsamma lagringen av Franciacorta äger rum. Inne i gårdens bondgårdar finns Vinmuseet, en unik institution i Franciacorta som bevarar tusentals föremål som vittnar om det förflutna arbetet.
