The vinification of DARWIN Vidoc follows a natural, low-intervention approach. The grapes, from the disease-resistant Vidoc variety, are harvested at full ripeness and either destemmed or fermented in whole clusters, depending on the vintage. Fermentation occurs spontaneously with native yeasts, without the addition of oenological inputs (no selected yeasts, enzymes, or sulfites). Extraction is gentle, using light punch-downs or pump-overs to preserve the fruit’s finesse and the wine’s natural structure. After pressing, the wine is aged for 24 months in tanks on fine lees, with minimal racking, allowing it to develop complexity and stability. No fining or filtration is done before bottling, and sulfites are kept to an absolute minimum—sometimes entirely absent, depending on the batch. This method aims to faithfully express the character of the Vidoc grape and the purity of the fruit, resulting in a red wine that is both intense and effortlessly drinkable.
