Our vineyard, spanning 5 hectares bathed in Mediterranean sunshine, is divided into two distinct plots: old vines (3.5 ha) and young vines (1.5 ha). The old vines, with their deep-reaching roots, produce grapes of exceptional quality, while the young vines bring a touch of modernity to our cuvées. The Mediterranean climate—characterized by hot summers, mild winters, and the Tramontane wind—naturally preserves the health of the vines and promotes optimal ripening.
Clay-Limestone SoilsRich in clay and limestone, our soils ensure excellent drainage and a subtle mineral edge, resulting in complex, deep, and structured wines. The gentle topography, nestled between rolling hills and wide-open spaces, allows for maximum sun exposure and meticulous vineyard management.
A Respectful VisionAt Domaine de la Paillouse, we craft fine, structured, and approachable red wines while honoring the land and all living things. Our organic approach eschews synthetic chemicals in favor of herbal teas, fermented plant extracts, and essential oils to naturally strengthen the vines. Manual harvesting, natural fermentations, and plot-by-plot vinification reveal the true essence of our terroir.
